Rock Samphire, Watermelon & Tomato

This is simple salad I made up the other day when I needed a salad in a hurry. Therefore no measurements I’m afraid, but it tasted fresh and crunchy and looked very pretty!

Rock samphire is found on the cliffs and rocks above high tide level, and has quite a powerful carrot/kerosene taste. It is crunchy and stays fresh in the fridge for some time.

Cut cherry tomatoes in half and mix them up with approximately the same amount of small chunks of watermelon.

Add rock samphire and toss all together with a dressing. I used sesame seed oil and cider vinegar with sea salt and cracked black pepper.
